Rustic Breakfast Bruschetta

I have to say that bruschetta is one of those amazing foods that I never tire of. It is constantly being reinvented with new flavor combinations and I love experimenting with various new ingredients.  This morning I went through the kitchen to see what ingredients I had around for experimenting on a beautiful Saturday morning.  After seeing what was available, I determined to give a breakfast bruschetta a shot. The end result was delicious. So simple as well.


Rustic Breakfast Bruschetta

Ingredients:
1 Slice French peasant bread or similar round loaf
1 egg
1 bunch clamshell mushrooms or thinly sliced button mushrooms
1 finely chopped scallion
1/2 tsp minced garlic
1/4 cup white wine
2 tbsp grated mozzarella cheese
Cooking oil spray

Method:
Slice bread into 1/2 thick slices and grill both sides on gas grill or broil in oven until edges are dark crispy brown.  Set aside. Spray a sauté pan with cooking oil and sauté chopped scallions and mushrooms over medium high heat until tender.  Once tender add 1/2 tsp garlic and sauté until fragrant about 30 seconds longer.  Add in white wine and simmer until liquid is almost gone. 

Meanwhile, scramble the egg seasoned with salt and freshly cracked pepper in another sauté pan.  Add the cheese just as the eggs begin to set and stir until melted.  Spread on grilled bread slice and top with mushrooms.
